Carrageenan is a natural hydrocolloid extracted from red seaweed, used to thicken, stabilize, and improve texture in food products.


Carrageenan is a polysaccharide obtained from red algae (seaweed) and appears as a white to light-yellow powder. It is widely used in the food industry for its ability to bind water, form gels, and stabilize emulsions, especially in dairy systems.

There are three main types:

  • Kappa carrageenan – strong, brittle gels (with potassium ions)

  • Iota carrageenan – soft, elastic gels (with calcium ions)

  • Lambda carrageenan – thickening only (no gel formation)
