Ammonium Bicarbonate is a chemical leavening agent widely used in baking to create light, porous textures, especially in low-moisture products.

Ammonium Bicarbonate is a white crystalline powder that decomposes completely when heated, releasing carbon dioxide (CO₂), ammonia (NH₃), and water vapor. This reaction makes it an extremely effective raising agent without leaving alkaline residues in the final product—provided the product is fully baked and dry.

Unlike sodium bicarbonate, ammonium bicarbonate:

  • Leaves no residual salts

  • Produces strong and fast leavening

  • Requires high baking temperatures and low final moisture

Because ammonia gas must fully evaporate, it is not suitable for moist or thick products, but ideal for thin, dry bakery items. Industrially, it is valued for cost efficiency, strong leavening power, and clean texture results.
